Description

Vinification: After careful selection in the vineyard, the grapes are harvested by hand and placed in small crates. They are left to dry for about 3 months in our drying room, where temperature and humidity are strictly controlled. During vinification, cold maceration is prolonged for five days, after which alcoholic fermentation begins in steel tanks. Malolactic fermentation takes place in the same steel tank, and the wine is then aged in French oak barriques and tonneaux for about 2 years. A subsequent ageing of 12 months takes place before release. Organoleptic characteristics. Colour is dark ruby red with garnet edges. Nose there are distinct notes of plum and black cherry, clove, black peppercorns. On the palate, the wine is velvety, rich in fruity notes. The finish is balanced between sweetness and savouriness. Pairings: White meat dishes, grilled meats, American bbq. Spicy Asian cuisine. Matured and blue cheeses.
