Description
Careful selection of Negroamaro bunches from old vines bred as alberello. The grapes are first brought to maturity and then left to dry on mats. The name of the wine derives from the Graticciaia, the fruit cellar where the light mats made of woven reeds and wicker are placed. When the drying process is complete, the grapes move on to vinification. The physiological processes that take place in the grapes and the fermentation of the must in late autumn, when the ambient temperature is lower, lead to an evolution that is completely different from traditional vinification. The temperature of the must is strictly regulated throughout the slow fermentation process and the first stage of ageing is carried out in small wooden barrels. It is a wine of great personality that shows no signs of weakening with the passing of the years. Ageing in the bottle helps to improve it over time and its qualities will certainly last for a long time. It displays beautiful tones of dark ruby red colour, with garnet nuances, brilliant. The bouquet is complex and frank. Attractive, ethereal, with hints of dried fruits and liquorice, pleasantly spicy. Well structured, warm, elegant with a hint of tobacco and notes of dried fruit and vanilla. In the mouth there is a very pleasant evolution of flavours which are expressed with elegance and balance. Pairings. Hard cheeses, braised meats, roasted red meats, game, grilled lamb, goose liver dishes, truffled foods and also chocolate.
