Sphaeranera in Anfora I Cacciagalli is a wine that is striking for its integrity and tension, and one of the most credible testimonies to Pallagrello Nero. We cannot deny that, especially in recent years, the concept of territoriality or territorial adherence in the world of wine has been somewhat mistreated and abused, but we certainly cannot say the same of the liquids bottled by Marco and Diana in Teano. 9 hectares of vineyard, cultivated with simple and straightforward intentions, namely to respect the territory, biodiversity and local native varieties such as Pallagrello Nero, Aglianico, Falanghina and Fiano. All the wines have great purity in common, as well as a certain austerity that never leads to dumbness, but rather consolidates the idea of granitic and cohesive liquids. Centred and deep bottles, at a more than reasonable price. The red Sphaeranera I Cacciagalli is made from pure Pallagrello Nero grapes, grown on volcanic soils rich in limestone and sand, and following the dictates of organic farming with some biodynamic precepts. In the cellar, spontaneous alcoholic fermentations and long macerations on the skins are carried out consistently, without the liquid being filtered or clarified. Maturation in terracotta amphorae for 8 months. The Sphaeranera wine peeps into the glass in a dark, impenetrable red guise. The nose is dark, visceral but never rustic, made of blueberries, earth, vinous hints and violets. Pulsating and vital, it is however on tasting that the wine conquers in every way, with a sculpted but unforced physiognomy. Freshness sprays, saline impetus, sculpted tannin: a delight! Impossible not to think of it in terms of gastronomic pairings, such as red meat in almost all its declinations, also by virtue of a not inconsiderable taste persistence.
